Fifteen Years Of One Recipe

It started with a simple question: what if a bowl of payasam — the one you only got at weddings and temple feasts — was something you could have any day, any time, no occasion required? That line of thought is where Nalukettu Payasam was born, in a Kozhikode kitchen with one recipe and zero shortcuts.

Fifteen-plus years later, we’re still the dedicated destination for people who take their payasam seriously. Real milk, real jaggery, hand-cut ada — reduced the slow way, in batches small enough that someone actually tastes each one before it leaves the kitchen. That’s not a tagline. It’s the only way we know how to make payasam that tastes like someone’s grandmother made it — because, in a way, she did.
